12 eggs makes 18 crepes. slightly different tripled recipe:
- 12 eggs (M or L)
- 700g wheat flour
- 1.5L milk
- 60 g sugar
- 0.5L cider
- salt
- ~150g butter (200g brick is enough). I advise putting this on the grill between each crepe, not inside the batter, despite what the base recipe says.
First beat the eggs, then add the milk, then add flour slowly. Let the mix rest in a refrigerator for 20 minutes, then smash the chunks of dry flour that float to the top. After that, the mix should rest between 1 hour and overnight.
Right before cooking, add the salt and the cider. There isn't any baking powder in a crepe, but you can optionally use fizzy drinks like cider to make them fluffier.

- I didn't use margarine.
- I cleaned the grill with salt and seed oil then left it hot to season for about an hour before cooking the first crepe. Then I added butter and dough seconds after the butter.
- the 4.4kW maxima grill I set to 200C on the left and 190C on the right. Preheat it until the click of the dial indicates it has reached temperature, and expect it to burn the first crepe: don't reduce temperature unless it also burns the second and third crepe. I made 2 crepes per cycle on this grill. The grill isn't temperature stable enough to make perfect crepes so you'll have to cook some about twice as long as others as the temperature rises and falls, but it works well overall. Ideal cycle in my opinion is 70 seconds on the front and 50 seconds on the back: it seems possible to acheive the nice brown color with the temperature that produces this cycle time.
- It's important to level the grill, which you will discover on the first crepe if you don't do it.
- put out a topping station with banana and nutella or whatever before you begin cooking or else people will take crepes straight from beside the grill and shove them in their mouths, and you can't blame them because crepes are better hot.
